

Cellar
It is located at the entrance to the town, for those coming from Nuoro. Made with newly developed techniques, materials and equipment, it is very functional and suitable for processing operations and for receiving guests who wish to taste the wines of the winery. The grapes, harvested by hand at different times, arrive in the winery in small boxes after sorting for a further selection of the bunches, which follows that already carried out in the vineyard, they are conveyed inside the crusher-destemmer where the grapes are gently separated from the stalks and pressed. The crushed grapes are transferred inside the 50 hl winemakers, where, following the addition of very small doses of metabisulphite (5 grams/q.le), fermentation begins with native yeasts.
