Description
The wine has an intense ruby red color with garnet variations as it ages. The intense and enveloping aromas recall ripe fruit such as plum and black cherry, with spicy notes and balsamic accents. On the palate it is warm, well-structured, with soft and velvety tannins, which make it harmonious. The finish is long and persistent.
Production area
The grapes come from the valleys of Locoe and Sorasi and from the high lands of “Sa Lacana”, in the Orgosolo countryside. Cantine di Orgosolo takes particular care in choosing the grapes for the production of Soroi wine; they are selected with reference to their provenance from: old vineyards, at least 30 years old-high hill areas-excellent organoleptic parameters.

Breeding method
The small vineyards allow for meticulous control of the plants and the training, using saplings and spurred cordons, is geared towards quality.
Winemaking
The grapes, hand-picked, are delivered immediately after the harvest. In the cellar they are subjected to very soft pressing with destemming. Spontaneous fermentation in oak at a controlled temperature.
Refinement
In oak barrels for a minimum of twenty-four months, rest in bottle
